2010 Kramer Vineyards Brut Sparkling Wine

“This rousing sparkler is made from hand-harvested, estate-grown Pinot Noir and Chardonnay grapes in the Methode Traditionelle–the traditional
process used in making French Champagne.
The wine, with luscious citrus, green apple and fresh sweet dough flavors, is spectacular and calls to mind the apocryphal quote often attributed to the old monk Dom Pérignon, “Come quickly, I am drinking the stars!”
Production Notes:
The grapes were harvested by hand and whole-cluster pressed. The juice settled overnight then was transferred to a stainless steel tank for primary fermentation. The base wine aged in bulk for 8 months on the lees prior to bottling. For the second fermentation, the base wine was sweetened and bottled with encapsulated yeast then was stored in triage bins to ferment and age. Disgorging began in late May 2011, finishing the wine with 3 g/l dosage. This wine is disgorged 10 cases at a time.
